Sweet potato & Butternut Salad

Sweet potato and butternut in a salad… who would have ever thought? I tried this combination for the first time and I must say that it turned out to be the best “salad” ever!





  • 1 medium sized butternut

  • 2 medium sweet potatoes

  • A handful of spinach leaves, finely chopped

  • 1 block of feta cheese

  • A handful of mixed seeds

  • Olive oil

  • Balsamic glaze

  • Himalayan pink salt, to taste

  • Black pepper, crushed



  1. Steam butternut and sweet potatoes. Allow to cool down, peel and slice into small cubes. Layer onto a serving plate.

  2. Top with spinach leaves, crumbled feta cheese and mixed seeds.

  3. Drizzle with olive oil and balsamic glaze.

  4. Add salt and black pepper to taste.
