Easy Pizza

Saturday nights at my in-law’s place were always pizza nights! This is my mum-in-law’s special recipe that brought all the siblings together for a night of good food and hearty conversations. The dough is made without yeast so you can make it without planning ahead – no waiting required in order for the dough to rise.

Ingredients

 

Dough:

  • 1 cup cake flour

  • ¼ cup self-raising flour

  • 1 tsp baking powder

  • Salt to taste

  • 1 ½ Tbsp oil

  • Boiling water

 

Tomato pureé:

  • 1 Tbsp oil

  • 3 tomatoes (washed and blended in a liquidiser)

  • Salt to taste

  • 1 tsp red chilli powder

  • 1 tsp crushed garlic

  • ½ tsp sugar

 

Toppings:

  • Green pepper

  • Red onions

  • Jalapenos

  • Grated cheese

  • Black pepper

  • Origanum

  • Optional extras: Mushrooms, zucchini, peppadews

 

Method

  1. Sift cake flour, self-raising flour, baking powder and salt together. Add oil to flour to form a breadcrumb texture. Add boiling water gradually to form dough.

  2. To make the tomato pureé, add oil to a pot on medium heat. Add tomatoes, salt, red chilli powder, garlic and sugar. Boil till most of the liquid evaporates, forming a thick sauce.

  3. Roll the dough into a circle, spread tomato pureé, followed by toppings. You can add on any toppings of your choice – the ones in this recipe are what my mum-in-law always used. The optional extras are what I added on.

  4. Bake on pizza stone (pre-heated first in the oven) for 13-14 minutes with the oven set at 220 degrees Celsius.

    This recipe makes 2 medium pizzas.
