Apple Crumble Bites

When a sudden chill fills the air, I look for something warming for breakfast. I totally took a chance on this concoction of apple and spices and when tasted them, we decided to call them Apple Crumble Bites because the taste was so similar. DO NOT be fooled by looks because looks can be deceiving! These tasted AMAZING! Sweetened with jaggery, wheat-free and made with good fats… ticks all my boxes!

 Ingredients

  • 2 cups peeled & grated red apples

  • 1 Tbsp apple cider vinegar

  • 1 cup jaggery powder (or sweetener of choice)

  • 1 tsp ground all-spice powder

  • 1 tsp dry ginger powder

  • 1/2 cup chopped almonds

  • 1/2 cup coconut oil

  • 1 Tbsp flax flour + 1/4 cup water

  • 1/2 cup rice flour

  • 1/2 cup chickpea flour

Method

  1. Combine the apples, vinegar, jaggery powder, all-spice powder, ginger powder and almonds and coconut oil in a bowl.

  2. Mix flax flour with water, allow to stand for 2 minutes and then combine into apple mixture.

  3. Sift rice flour and chickpea flour into the apple mixture and mix well.

  4. Drop spoonfuls of the batter into a non-stick medium-sized cupcake tray. The tray I used is the one with 24 spaces.

  5. Bake at 180 degrees Celsius for 20 minutes.

  6. Enjoy while warm.
